Holiday Cookies & Treats Continues

Rosemary's been busy, but found some time to sneak in the kitchen and cook up some gluten free Almond Lace Pizzelles! (They came out delicious, trust us!) Here's the recipe for you -- enjoy!
Gluten Free Almond Lace Pizzelles
Makes about 2 Dozen Cookies
*Note-you need an electric Pizzelle Iron for these.*
¾ Cup Sugar
2 tsp. Vanilla Extract
1 tsp. Almond Extract
½ Cup (1 stick) Unsalted Butter, melted & cooled
1 ¾ Cup Almond Flour
2tsp. Baking powder
1 Cup Confectioner’s Sugar
3 Tblsp. Hot Water
2Tblsp. Sliced Almonds
1. Beat the eggs and sugar together until fluffy & light. Add in melted butter and extracts.
2. Sift together the dry ingredients. Add into the egg mixture, and beat until just blended together.
3. Heat the Pizzelle iron. Place about 1 Tablespoon of the batter onto the grid-just behind the center of the pattern. Lower iron handle, and cook until golden brown- 30-40 seconds. Remove & Cool on a rack. Repeat with remaining batter.
Icing- Mix together Confectioner’s Sugar & Water, until smooth. Add in almonds. Drizzle over the cookies.
